Recently while racking my brain to make something unique for dinner, I remembered a spinach-ricotta cheese recipe that I had made a few years ago using crepes instead of lasagna noodles. I decided to have a weekend of crepe-making and started investigating all the recipes I could find using crepes.
Crepes are super simple to make. It feels kind of like making super thin pancakes. They are usually made from whole wheat flour, but I just made them from regular all-purpose flour since that was all I had.
